It started with “not too sweet.”
If you grew up around Asian families, you probably know the compliment.
“It’s good. It’s not too sweet.”
Somehow, that became the idea behind Edo.
We loved the richness of Basque cheesecake — the caramelized top, the creamy center, the almost unreasonable amount of indulgence in one slice.
We just wanted less sugar getting in the way.
So in Baltimore, we started making our own.
Inspired by the Japanese approach to balance and restraint, we worked toward a cheesecake where no single element overwhelms the rest: rich but not heavy, deeply caramelized but not bitter, creamy and indulgent, but never too sweet.
That became Edo Cheesecake.
And cheesecake is only the beginning.
We’re building Edo around a simple belief:
dessert doesn’t have to choose between indulgence and balance.
Sometimes, the highest compliment really is:
“It’s not too sweet.”
